The evening belongs to Amman's streets. Your guide leads you through the city's most characterful neighborhoods on a flexible, unhurried foodie walk. The route moves through local bakeries, street food institutions, and hidden spots that no restaurant guide lists. Knafeh pulled fresh from the tray, falafel from a counter that has been frying since before you were born, mint tea in a place where the regulars have been sitting for decades. An introduction to Jordan through the thing it does best. 

A morning drive north to Jerash, one of the best-preserved Roman cities in the world and one of the most underappreciated archaeological sites in the Middle East. Your expert local guide walks you through the Cardo, the South Theatre, the Temple of Zeus, Hadrian's Arch, the Temple of Artemis, and the Nymphaeum, a city built for permanence and wearing its age beautifully. 

The afternoon moves to a local family farm for a curated farm-to-table experience. The centrepiece is the bread making, Saj bread prepared over an open flame using techniques unchanged for generations, eaten warm as it comes off the griddle with fresh goat cheese, yogurt, and traditional dishes prepared from what the farm produces. Lunch is taken under a four-hundred-year-old oak tree. It is the kind of meal that has nothing to prove and everything to offer. 

A drive back to Amman as the evening settles. 

The drive south from Amman begins at Madaba, the mosaic capital of the Middle East. In the Church of St. George, a Byzantine mosaic map of the Holy Land dating to the 6th century covers the floor, the oldest surviving cartographic depiction of Jerusalem and the surrounding region. Extraordinary not only as an artifact but as a reminder that this part of the world has been mapped, contested, and cherished for longer than most civilizations have existed. 

The mosaic workshop that follows is one of the most hands-on experiences in the entire Solaya Jordan portfolio. Under the guidance of a master craftsman whose family has practiced this art across generations, you work with stone and tile to understand a technique that has been alive in Madaba since the Byzantine era. A short drive to Mount Nebo, where Moses is said to have seen the Promised Land before his death. On a clear day the view across the Jordan Valley toward Jerusalem and the Dead Sea is one of the most quietly affecting in the region, a landscape that three of the world's great religions have looked at and called sacred. 

The drive continues south through the King's Highway, one of the oldest trade routes in the world, arriving in Petra as the afternoon light turns the sandstone pink.
